4 Yellow Summer Squash
Herbs of Provence
Slice yellow squash and carrots into rounds. Heat a good glob of grapeseed oil in a skillet set to medium high. Add the squash and generously shake the Herbs of Provence on top. Don’t flip or stir veggies. Let them caramelize a bit, then flip and add more herbs. Once cooked through, serve with your favorite main or simple salad.
